As the first guest I introduce you all to Rafeeda ,my friend who blogs at The big sweet tooth.I knew Rafeeda since my pre- blogger year(s) through her blog .She has always been a source of inspiration spiritually and professionally .An amazing human being and a good friend. As  her blog name ohh!! sorry  its a website now,suggests ,she is a person with a big sweet tooth . She has an amazing collection of deserts and Malabar recipes over her blog .Do hop on to believe it .As expected she has come up with a delicious butter scotch bread pudding .I leave you with rafeeda on a dessert date....

I have known Nusrath before the time she turned into a blogger. She was very active on my blog’s FB page and would give her likes and comments on the recipes that I would post. It was much later that I came to know she had a blog of her own, which I started frequenting for some lovely recipes and simple, yet beautiful photographs. It is a pleasure being here today on her space as a guest and Alhamdulillah, I feel truly honored… J
My name is Rafeeda and I blog at “The Big Sweet Tooth”. An Indian, from the south Indian state of Kerala, a working mother to two lovely daughters and a sweet freak – that kind of sums me up! J I was never a cooking enthusiast till around a few years ago when I was forced to cook in the absence of my mother. Even though it started as a lazy affair, the love for cooking grew. I have been a foodie since I can remember but cooking did take to be in my good books. The blog was born just for a diary sake for my recipes, but it has gone from being more than that. Alhamdulillah, this is my third year of blogging and I am enjoying it as much as I can.

Coming back to Nusrath, I really adore how quickly she has caught up with the nuances of food blogging and her pictures are indeed commendable.  I have always been struggling with my pictures but I really love how she has learned quickly in making her food look delectable, which is one of our main challenges.  Needless to say, I have already bookmarked a few recipes from her blog  which include the ragi banana bread and the Mughlai Bhindi





When Nusrath asked me for a guest post, the first post that came to my mind was this delicious bread pudding, which was adapted from a Lakshmi Nair recipe that had appeared in a famous Malayalam publication. I love bread puddings because of the ease of putting together. I always have bread in the house, as the kids love them, but sometimes over the weekend when the bread threatens to stale off, then this is one way of doing it away. What I loved about this recipe is that instead of sweetening plainly with sugar, we make butterscotch/ caramel and sweeten it, so the end result is a tantalising bread pudding. It is perfect for gatherings, to be served warm plainly or with a big scoop of ice cream! Off to the recipe…




Butterscotch Bread Pudding
Serves 4-6

Ingredients:


  • 6 to 8 bread slices (I used 4 buns)
  • 2 eggs, separated
  • 2 cups milk
  • 1/3 cup + 2 tbsp sugar
  • 30 gm butter





Method:

  1. Preheat the oven to 180 degrees. Keep a square baking pan ready.
  2. Chop the bread into pcs with or without the side. Spread into the pan.
  3. Beat the egg yolks well, then add the milk and beat well. Warm this mixture on low flame till just hot.
  4. Put the 1/3 cup sugar in a thick saucepan and allow it to caramelise on low flame. As it melts and turns amber colour, add in the butter and mix well till it melts. Pour this slowly into the egg milk mixture and whisk till combined. Pour this mixture onto the bread and allow it to soak up the milk.
  5. Beat the egg whites till stiff. Add in the 2 tbsp sugar and beat again. Spread over the bread and slowly fold in using a spoon.
  6. Bake for 40 minutest till browned. Serve warm.
